
Today was Ride Your Bike to Work Day. It was fun. I was off work today, but still was able to ride my bike all day long until my feet fell off. The day started by waking up early and riding with my boyfriend to his work. We stopped at OZO coffee place and I was surprised by how nice the free breakfast was (for all the bike riders). They had quite the spread- yummy breads (I almost wrote “sweet breads”, but have recently learned that sweetbreads are the nasty bits of the animal… not your typical breakfast… haha), regular and gluten-free bakery, breakfast burritos, and delicious OZO house blend coffee. After breakfast we split our ways, and I started my adventure!
I decided to get my hair a few tones darker so I biked to On Broadway Hair Salon and Boulder Spa. Instead of going the regular way I took the bike path. It goes along the Boulder Creek. It was so peaceful and relaxing to me. After getting my hair done (I’m a super dark brunette now) I was planning to bike to Whole Foods and get some groceries to make dinner. On my way I saw Alfalfa store and decided to go there instead (it is very similar to Whole Foods, but it is only located in Boulder/Lousville, CO). Fast forward my shopping adventure and my wonderful way back, I was finally home and was on to making a yummy dinner. Homemade Chicken Meatball Soup… I remember my mom always making this soup and I always loved eating the little meatballs in it and leaving all the rest..haha If you have never heard of the chicken meatball soup think of it like a chicken soup with a twist.
Here is the recipe for all who likes to try new interesting recipes (I added a few things to make it a little different)
-fresh ground chicken (1/2 lb)
-egg (1)
-chicken base to make bouillon (I used-Organic Better Than Bouillon chicken base) (2 tbs)-potatoes (2 medium)
-onion (1 medium)-one half for meatballs another one for soup
-garlic (2 cloves)
-carrot (1 medium)
-italian parsley
-green onions
-ground black pepper
-salt
-ground cumin
-ground paprika
-bay leaf
Prepare the meatballs first: combine with a large spoon or hands meat, egg, chopped parsley, shredded 1/2 onion, minced garlic cloves, salt/pepper, paprika, and a pinch of cumin. Place in the fridge while cutting up the rest of the veggies and making the bouillon. Fill a medium sized pan with water and let it boil. Add the chicken base. put the heat on medium. Dice potatoes. Finely chop the onion. Shred the carrot (be careful I almost shredded my finger off, lol), finely chop the parsley and green onion.
Now, turn up the heat and bring the bouillon to boil. Take out the meatball prep and make one inch balls (will be kind of slimy and runny but once dropped in the boiling water will form into nice balls). Once finished let it boil until the meatballs float. Add potatoes. Put on medium heat.
While that is cooking, take chopped onions and shredded carrot put into a skillet with vegetable oil and saute it for a few minutes. Don’t let it get brown!!! Add to soup. Add salt/pepper and bay leaf. Don’t over salt it. If you do so- drain it a little and add cold water (happened to me). Now wait until potatoes are done… add a little more parsley…voila done!
I garnished it with chopped green onion and parsley.
