Last night I bought a new pan, crêpe pan. I made some crêpes for dinner’s dessert. They were delicious!!! This morning I was thinking of making crêpes again, but remembered how much work it was and got a bit lazy so made a Russian version of buttermilk mini pancakes… without the buttermilk.. I honestly do not know how much I used of everything but it is very simple…so I will try to write down the recipe:
2 eggs
2 tbs. sour cream
3/4 cup milk
4 or 5 tbs. of flour
1 tbs. sugar
pinch of salt
So I beat the eggs with sour cream, sugar, and milk first, making sure it is not foaming up (used a fork). Then added a spoon of flour and mixed it together so there are no clumps, continue with the rest of flour… Heated up the pan on medium, added a little oil… To make them little I took soup spoon (tbs) and poured each pancake into the pan.. flip them when the edges no longer runny.
I like to eat my pancakes with jelly and sour cream.. This time I used mixed fruit jelly and crème fraîche… I also made black hot tea.. Breakfast is ready! Enjoy!
